There is nothing better than a warm cookie and a cold glass of milk! Except maybe eating them without guilt! While I’m all for balance, (as in go ahead and eat that salad, then have some ice cream) I do love finding a delicious dessert that isn’t horrible for me. And when it makes the whole house smell amazing too? Well then you have a win-win in my book. That’s what you’ll get with these fantastic peanut butter chocolate chip cookies with no added sugar!
Peanut Butter Chocolate Chip Cookies With No Added Sugar!
I’m not a huge baker. You won’t find me mixing away in the kitchen on a normal Sunday afternoon. And you likely won’t see me eating tons of cookies or cupcakes or baked goods. Why? Because I’m a pretty simple girl, give me some regular chocolate or some ice cream and I’m good to go! But every once in awhile, I crave a good cookie. So I wanted to find something easy to make, delicious, and somewhat healthy.
A little disclaimer here, these cookies aren’t your over the top, sweet treat. If you’re craving a gooey and moist and decadent chocolate chip cookie (you know what I mean, the one that the chocolate just melts out of when you break it apart), then this one isn’t for you. But if you just need something a little sweet with a little bit of a crumble, then I’ve got the perfect cookie for you!
One of the best parts about this recipe is that I can almost guarantee you have all the necessary ingredients already in your cupboards! In fact, the only ingredient you might need to buy is oat flour (you could try out any flour you have in the house though). I actually make my own oat flour because it’s ridiculously easy. But you could always buy some, like this kind. To make your own, simply put oats in a blender, or food processor, and push the button. I’m serious. That’s it.
The rest of the ingredients are pretty standard cookie ingredients. You’ve got your peanut butter (I use regular, but you could try an all natural brand if you wanted. Texture will likely be a bit different), honey (again I use regular, but go ahead and experiment with agave or another sweetener of your choice), milk (yep, you guessed it, I use regular. I’m sure almond, or soy, or whatever else you might like would work as well), an egg (did you know you can milk water and ground flax seeds as an egg substitute??), baking soda, vanilla extract, and of course chocolate chips.
If you want to change out the chocolate chips for another type of chip, go for it! This is your cookie!
You all know that I like to keep things simple. That’s the name of the game here at Just Keep it Simple Fitness. Which is why my food recipes are really no different. And neither are these peanut butter chocolate chip cookies with no added sugar.
So here are the directions.
- If you need to grind your oat flour, do that first. Skip to number 2 if you already have ground flour.
- Pre-heat your oven to 350 degrees.
- Mix all ingredients except for the chocolate chips. Using a mixer is your best bet. I love my stand mixer, it’s a Kitchenaid!
- Once it’s all completely mixed, fold in your chocolate chips (or whatever chip you want to use!)
- Using a spoon, make small cookie balls and spread them evenly on a non stick pan. The cookies will not rise or spread out, so make sure to press them to the thickness you like before baking.
- Bake cookies for 10-15 minutes!
Go ahead and let them cool for a few minutes, and then enjoy! I told you it was fairly simple! And in case you were wondering, they are toddler approved!
